Arayes (Syrian Grilled Meat‑Stuffed Pita)

Crispy pita pockets filled with a spiced ground lamb (or beef) mixture and grilled until golden — a classic Syrian street-food snack that's quick, satisfying, and great for a mezze plate.

Method

  1. Put the ground meat in a medium mixing bowl.

  2. Grate the onion into the bowl (or finely mince), then add the chopped parsley, 2 tbsp olive oil, salt, black pepper, allspice, cinnamon and red pepper flakes if using.

  3. Mix the filling with your hands or a spoon until evenly combined and slightly sticky.

    Use a light hand — overworking makes the filling dense; the mixture should hold together when pressed.

  4. Cover the filling and chill briefly in the refrigerator to firm up, which makes stuffing easier.

    Chilling also lets the flavors meld; you can skip the chill in a hurry but the filling will be looser.

  5. Meanwhile, halve each pita into two pockets by cutting through one side so you have 8 open pockets.

  6. Fill each pita pocket with a generous tablespoon or two of the meat mixture, spreading it thinly and evenly across the inner surface so the pocket sits flat when pressed.

    Thin, even layers cook through faster and make the pita crisp rather than puffing up.

  7. Heat a large skillet or griddle over medium–medium‑high heat and add 1 tbsp olive oil, swirling to coat.

  8. Place stuffed pitas seam-side down in the hot skillet and press with a spatula or a heavy pan to flatten.

    Work in batches so the skillet isn’t overcrowded; you want direct contact for a good crust.

  9. Cook the arayes on the first side without moving until well browned and crisp, about 5 minutes.

  10. Flip each pocket and cook the second side until the meat is cooked through and the pita is deeply golden, about 4 minutes.

  11. Transfer cooked arayes to a plate, sprinkle with sumac if using and squeeze lemon or drizzle pomegranate molasses as desired.

  12. Serve warm (2 halves per person for 4 servings).

Worth knowing

  • If you like leaner meat, use ground beef or mix beef and lamb. Adjust salt if your meat is already seasoned.
  • For the fastest prep, grate the onion directly into the meat to capture the juices without adding extra water.
  • Pressing the pockets while cooking gives a crispy exterior; use a heavy spatula or place a smaller pan on top to press.
  • Arayes reheat well in a 375°F (190°C) oven for 6–8 minutes to regain crispness.
