Method
Char the whole eggplant: hold over a gas flame, turn every 1–2 minutes, or place on a lightly oiled baking sheet under a hot broiler, until skin is blackened and flesh collapses.
Cool the charred eggplant until you can handle it, then peel off the skin and discard; transfer the flesh to a bowl and roughly chop or mash with a fork.
While the eggplant chars, bring a pot of salted water to a boil and add the diced potatoes; simmer until a fork pierces but the pieces hold shape.
Drain the potatoes and pat dry with a towel.
Heat 1 tbsp oil in a large heavy skillet over medium-high heat and fry the potato dice in a single layer until golden on most sides; transfer to a plate.
In the same skillet, add the remaining 1 tbsp oil and cumin seeds; when they sputter, add the sliced onion and 1/4 tsp salt and sauté until soft and beginning to brown.
Add the minced garlic, ginger and chopped green chilies and sauté until fragrant.
Add the chopped tomatoes, coriander powder, turmeric, red chili powder and the remaining salt; cook, stirring occasionally, until the tomatoes break down and the oil starts to separate from the masala.
Add the mashed eggplant, peas and fried potatoes to the skillet and fold together gently until evenly combined.
Reduce heat to medium-low and simmer the mixture, pressing some potato and eggplant with the back of a spoon to create a coarse, cohesive bharta; cook until heated through and flavors meld.
Stir in garam masala, lemon juice, chopped cilantro and (if using) kasuri methi; if you like, finish with a knob of ghee or butter and adjust salt.
Serve hot with warm rotis, naan or steamed rice.
Worth knowing
- For true smoky flavor, char the eggplant directly over an open flame; broiling is the easiest oven method if you don't have a gas flame.
- If you prefer a firmer texture, reserve half the fried potatoes and stir them in at the end instead of mashing them into the bharta.
- Use Kashmiri chili for color with milder heat; use regular chili powder if you want more kick.
- Make ahead: flavors deepen overnight; reheat gently with a splash of water or oil to loosen.
- To make the dish vegan, use vegetable oil and omit ghee (the recipe as written uses no dairy).
