Method
Make the quick pickled shallots: combine the apple cider vinegar, sugar, salt and water in a small bowl and stir until sugar dissolves.
Add the sliced shallot to the vinegar mixture, press the shallots so they are submerged and let sit at room temperature for 15 minutes.
You can make these ahead and refrigerate up to 3 days; bring to room temperature before serving.
Make the lemon‑chive aioli: in a small bowl whisk together mayonnaise, lemon juice, lemon zest, minced garlic and chopped chives; season with salt and pepper to taste.
Prepare the avocado: in a medium bowl toss the diced avocado with lime juice, cilantro (if using), 1/8 tsp flaky salt and 1/8 tsp black pepper; set aside.
Gently fold the crab into the avocado mixture, taking care not to break up the lumps; taste and adjust seasoning.
Brush both sides of the sourdough slices with olive oil.
Toast the bread under a broiler or in a 425°F (220°C) oven until golden and crisp, about 6 minutes, turning once halfway.
Alternatively, grill the slices or cook in a hot skillet 2–3 minutes per side for a charred flavor.
Assemble the toasts: spread about 1 tsp lemon‑chive aioli on each toasted slice, top with a heaping spoonful of the crab‑avocado mix, and finish with a few pickled shallots and a sprinkle of flaky salt.
Serve immediately with lemon wedges and microgreens or cilantro sprigs.
