Emulsions, and why your sauce split

What an emulsion actually is

An emulsion is two liquids that normally don't mix — oil and water — forced into a stable suspension of tiny droplets. The continuous phase is the liquid that surrounds droplets (most common: water-continuous oil-in-water emulsions like vinaigrettes, mayo, hollandaise). An emulsifier (egg yolk lecithin, mustard, cream proteins, xanthan) has a hydrophilic and a hydrophobic side and sits at the oil/water border to stop droplets from rejoining.

Common ways an emulsion splits — the real causes

When a sauce "splits" or "breaks" the droplets coalesce and separate back into layers. The usual culprits are mechanical, thermal, or chemical:

Pick the method that matches your sauce. Work quickly but cleanly.

  1. For a broken mayonnaise or vinaigrette: In a clean bowl whisk 1 egg yolk (or 1 tsp mustard for vinaigrette) with 1 tsp warm water. Whisk the broken sauce in a tablespoon at a time until it comes together.

  4. For cream-based pan sauces: Cool a bit, whisk in a small slurry of 1 tsp cornstarch + 1 tbsp cold water off heat, then return to low heat and whisk until thickened.
  5. If all else fails: Start a fresh base (one yolk + 1 tsp water or a tablespoon of mustard) and very slowly whisk the broken sauce back in, drop by drop at first.

What to expect back when you try these: a good recovery sounds like "I'll set up a bain-marie and whisk in a fresh yolk/water slowly"; a bad sign is "I'll keep boiling/whisking it on this heat" — that usually cooks the proteins and ruins the emulsion.
