The five pans every cook should own
Own these five and you can cook 90 percent of what matters in a restaurant or home kitchen. Sizes and materials matter; buy once, buy right.
1. 10 to 12 inch stainless steel fry pan (full-clad, 3-ply or 5-ply)
Use: searing, pan sauces, high heat finishes. Buy a 10 or 12 inch pan with a fully-clad construction (stainless outside, aluminum or copper core) and a flat base. Expect to preheat the pan to medium-high before adding oil; a telltale test is the water bead test: sprinkle a few drops and watch them ball up at about 325 to 375°F surface temperature.
2. 10 inch nonstick skillet (PTFE-based, commercial-grade)
Use: eggs, delicate fish, sticky things at moderate heat. Choose a high-quality PTFE nonstick rated for at least 400 to 450°F. Avoid heating an empty nonstick pan and do not exceed the manufacturer max temp. This is not your sear pan — use stainless or cast iron for that.
3. 12 inch cast iron skillet
Use: high-heat sears, oven-to-table braises, long-term heat retention. Pick a heavy 10 to 12 inch piece, or carbon steel if you need lighter weight. Seasoned cast iron is nearly indestructible; it can go into a hot oven (500°F and above), tolerate direct flame, and improve with use.
4. 3-quart heavy-bottomed saucepan with lid (stainless)
Use: sauces, rice, reheating, small braises. A 3-quart stainless saucepan with a tight-fitting lid and a heavy base avoids scorching delicate sauces and works on most burners.
5. 5 to 6 quart Dutch oven (enameled cast iron or heavy stainless stockpot)
Use: soups, stews, braises, shallow frying. For most kitchens an enameled 5 to 6 quart Dutch oven replaces a stockpot and gives you even heat and oven capability. If you need bigger batch cooking, choose a heavy stainless stockpot in a larger size instead.
The pans worth skipping, and why
Not every specialty pan is worth the space or budget. Here are common culprits and the trade-offs that make them unnecessary for most cooks.
- Cheap thin nonstick skillets: They warp, lose their coating, and fail quickly under restaurant use.
- Single-purpose novelty pans (egg rings, sandwich makers): Useful occasionally but take up shelf space and duplicate functions you already have.
- Expensive unlined copper for everyday use: Copper is fast and pretty but requires polishing, lining maintenance, and is reactive with acid; buy it only if you will use it daily and maintain it.
- Low-quality ceramic-coated pans: Many inexpensive ceramic coatings wear off fast; choose a trusted brand if you want ceramic.
- Large woks without the right burners: A proper wok needs high BTU and rounded burners; on a flat home stove a flat-bottom carbon steel wok or a sauté pan is more useful.
Material trade-offs: what really matters
Choose by heat performance, weight, maintenance, and reactivity.
- Stainless (clad): Best all-around. Fast enough, non-reactive, good for sauces and searing; look for fully-clad bases to avoid hot spots.
- Cast iron: Superior heat retention and durability; heavy and slow to respond. Seasoning prevents sticking and adds flavor layers.
- Carbon steel: Lighter than cast iron, same seasoning process, preferred in pro kitchens for woks and griddles.
- Nonstick (PTFE): Great for low-fat cooking and delicate foods; avoid high-heat searing and use utensils that will not abrade the surface.
- Enameled cast iron: No seasoning required, but the enamel chips if mishandled and the edges are reactive to chopping impact.
Trade-off rule: if you need speed and sear, choose stainless or cast iron; if you need delicate release and easy cleanup, choose a high-quality nonstick.
Quick buying checklist: exact questions to ask and tests to run
Bring this script to the store or to a supplier call. These are exact sentences that get the answers you need.
- Ask: Can you tell me the maximum oven temperature this pan is rated for? A good answer gives a specific degree, a bad answer is vague like it will handle normal cooking.
- Ask: Is this pan fully-clad or just bottom-clad? If fully-clad, that is good for even heating; bottom-clad only can have hot spots.
- Ask: For nonstick, is the coating PTFE or ceramic and what is the recommended max temperature? PTFE coatings usually allow higher heat, while ceramic often chips sooner.
- Test: Pick it up. Does the weight feel balanced for its size? Does the handle feel secure and riveted? Is the base flat or does it wobble on the burner?
- Ask: Is this induction compatible? If your kitchen uses induction, you need magnetic stainless or cast iron.
What a good vendor reply sounds like: We can tell you the rated oven temp, confirm full-clad construction, and show warranty information. A bad reply sounds like: It's fine for everything or we don't track the max temp.
Care, safe temperatures, and one important health note
Follow these habits to keep pans performing.
- Nonstick: keep below 450°F, never heat empty, wash with soft sponge, replace if coating flakes.
- Stainless: preheat to medium-high, then add oil; for stuck food soak and use a scouring pad or an oxalic-acid cleaner like a reputable brand to lift stains.
- Cast iron/carbon steel: keep seasoned, dry immediately after washing and apply a thin coat of oil while warm to prevent rust; re-season in the oven at 450°F for an hour if it dulls.
- Oven limits: if the manufacturer says 500°F, assume that is the safe working maximum for repeated use; for one-off higher heat, use cast iron or confirmed commercial-grade metal.

When buying for a kitchen, multiply needs by service patterns. Buy more of the pans you use every day, and one or two specialty pieces for specific menu items. Prioritize commercial-grade construction: thicker gauge metal, welded handles or solid metal rivets, and vendor service for replacements.
Expectations to set with your supplier: Tell them what you cook and ask for commercial-grade samples. A realistic line to the supplier: We need pans that can go from high-BTU searing to a 500°F oven daily and survive a commercial dish pit; show me the warranty and replacement policy. Good suppliers will supply specs and warranty; bad ones will promise generic durability without documentation.
Bottom line: prioritize a heavy 10 to 12 inch stainless pan, a reliable nonstick for eggs, a well-seasoned cast iron, a 3-quart saucepan, and a 5–6 quart Dutch oven. Skip low-quality specialty pieces and cheap nonstick; buy quality where the pan gets the most use.
